Bill and Dawn Williamson came from Australia and opened a tasting salon on the Plaza built around one idea: no wine should be poured without something to eat beside it.

Every pour arrives with a bite matched to it, and the pairings are not an afterthought. They are the reason the room works. The range runs wide, more than twenty wines across varietals, and the format keeps a tasting from turning into a slog.

It is right on the Plaza, a few minutes from the front door, and it folds easily into an afternoon in town. Good place to start or to end.
